I love green goddess dressing. In high school I used to buy the Annie's version and put it on everything: salads, sandwiches, chips (I have since replaced Annie's with hot sauce). After getting a bit of nostalgia, I began browsing through different recipes to make my own at home and found a few that incorporated avocado. I couldn't help thinking that the combination of buttermilk and avocados might be the best thing in the world. And I can't say I was unhappy with the result...
1/2 avocado, sliced
3/4 cup buttermilk
1/4 cup olive oil
1 teaspoon lemon zest
1/2 lemon, juiced
1 clove raw garlic
To make this tasty dressing, start by cleaning and picking all of the herbs and throwing them into the food processor. I used roughly 1/2 cup each of basil and parsley and just a handful of tarragon.
Slice the avocado and throw it in there too.
Zest some lemon and add it to the pile of stuff in the food processor along with the buttermilk, olive oil, garlic, lemon juice and salt. Blend it up until smooth. If you don't have a food processor, you can mince the herbs and garlic and whisk them together with the rest of the ingredients. That's it! This will keep in your fridge for a few days and makes about a cup and a half. Enjoy over salad, in sandos, in wraps or as a dip!
