I love rum- there is something so warming about it. I have heard different stories about different types of alcohol giving you a different buzz. I am not sure how I feel about that but I will say that rum makes me feel happy and cozy. This is a classic summer drink- a little sweet, a little fruity, a little bubbly, and a nice kick to back it up. If you have other fruit around that is in season, feel free to substitute as you see fit.
1/2 cup water
1 cup sugar
1/2 cup raspberries
1/4 teaspoon cloves (about 6 cloves total)
2 ounces dark rum
3/4 ounce lemon juice
To make a raspberry simple syrup, combine 1/2 cup water and 1 cup sugar in a pot over low heat. Stir until the sugar has dissolved and add the raspberries and cloves. Stir and let this cook together until the raspberries have broken down, about 3 minutes. Pull off of the heat and strain.
Either make the simple syrup ahead of time or let this chill in the freezer (if you are like me and cannot plan ahead for these types of things) for about 10 minutes. You just want to get it to room temperature or cooler so that it doesn't melt the ice when you start mixing the cocktail.
Combine the rum, 3/4 ounce simple syrup, 2 dashes of bitters, and 3/4 ounce lemon juice in shaker with ice. Shake hard for about 30 seconds and pour into a glass filled with ice. Top with 1-2 ounces soda water and enjoy! I garnished with some mint leaves but I imagine basil leaves could also be delicious. Depending on the rum you use, the sweetness or strength might throw this recipe a little off, if it is too sweet, add lemon juice, if it is too boozy, add more simple syrup.
